1. Our regular wine class for wait staff
If you want to train only one or two key wait staff personnel, our regular wine class for wait staff allows you to do this at a very low cost.
Our includes the following modules:
• Main wine regions of the world, varietals, and bending techniques
• Wine Etiquette
• Principles of food and wine pairing
• How to sell wines
• Role-playing exercises to firm up the acquired knowledge
In this session, each participant brings one or two wine bottles for a tasting exercise with the group. Other materials and hand outs are included in this class.

3. Wine List Assessment and Recommendation:
This is a two-hour consultative meeting where we analyze your wine list, recommend changes in wine selection, pricing and align the wines with your menu (s). Based on our knowledge of the consumer markets and the importer / distributors offering, we review your wine list in advance and spend two hours with the restaurant owners to discuss the wine list, including:
• Analysis of the mix of wines and recommendations to add / substract / replace some of these wines in order to increase your revenues
• Analysis of the pricing structure and recommendation on better prices in order to increase your profits
• Suggestion on wine flights, specials and wine program in order to boost revenues, especially during off peak period of time

2. Tailored wait staff training at your location:
If you want to train your entire team at once, this convenient program takes place at your location and includes the following modules:
• Main wine regions of the world, varietals, and bending techniques
• Wine Etiquette
• Principles of food and wine pairing
• How to sell wines

The entire seminar is tailored to your menu and wine list so that your wait staff gets an in-depth and targeted training. (We request that you send us your menu and wine list in advance to tailor the seminar). We can taste wines from your wine list. Other materials and hand outs are included in this class. |
4. Wine List Analysis and Redesign: With this approach, all the following services are / can be included:
• Wine assessment and recommendation as described above
• Redesign of all or part of your wine list (selection / pricing / sourcing)
• Analysis of your portfolio of vendors and recommended rationalization
• Establishment / management of relationship with vendors
